Sautee chopped onion, celery, carrots in some avocado oil
Once the veggies are soft, add in rinsed red lentils
Add liquid of choice, bring to a boil, then lower to medium and simmer until lentils are cooked through (soft or broken down)
Add salt and pepper to taste and some parsley right before it's finished cooking
You can add cumin for a slightly different flavor + helps with bloating
You can use an immersion blender at the end to make it creamy instead of chunky
Add a squeeze of lemon before serving
