Place your pan on the scales. Weigh in your washed berries and add 20% of their weight in sugar.
Add a splash of water (40ml).
Place the pan over a medium heat and stir so all the ingredients are combined.
Leave to cook until the berries are starting to collapse (about 4 mins).
Mash them up a bit with the back of a fork if they’re massive.
Mix 2 heaped tsp cornflour with 4 level tsp balsamic vinegar (or lemon juice).
Add this mixture into the pan and stir well.
Continue to cook for 2 mins, stirring frequently.
from the heat and pour into a very clean jar.
Once cool, it will be set.
Eat immediately or put a lid on it and put it in the fridge and eat within a week.
