Thinly slice or dice 5-6 Persian cucumbers and add them to a mason jar or salad bowl
Cube up a small avocado and add to the jar or bowl
Thinly slice 1-2 scallions, using both the white and green parts
Finely chop a large handful each of fresh dill and fresh mint
Add toasted and cooled walnuts, feta cheese, and sumac to the bowl
Dress the salad with lemon zest, lemon juice, olive oil, salt and pepper
Give it a really good shake or toss and serve
