in 5qt pot, over med heat, combine flour & butter.
stir constantly until roux has browned to a light chocolate color
add onion, green pepper, and garlic. saute for 2 min
add the sausage, chicken, broth, tomatoes, okra, thyme, bay leaves, and cayenne pepper.
simmer over low heat for 45-50min.
add the file powder, salt & pepper to taste.
remove and discard the bay leaves
serve gumbo over rice.
for extra special pot of gumbo, add peeled shrimp before adding file powder.
