Heat 2 tbsp oil in a pan, then add the onion and capsicum and cook until softened.
Stir in the corn and taco seasoning. Cook for a further 3 minutes
Add cream cheese, sour cream and let everything melt together.
Mix in 1 ½ cups shredded Mexican cheese until smooth.
Add coriander and shallots.
Squeeze in the lime, mix, garnish with more taco seasoning, and serve with tortilla chips.
