Mexican Street Corn Dip
  1. Heat 2 tbsp oil in a pan, then add the onion and capsicum and cook until softened.

  2. Stir in the corn and taco seasoning. Cook for a further 3 minutes

  3. Add cream cheese, sour cream and let everything melt together.

  4. Mix in 1 ½ cups shredded Mexican cheese until smooth.

  5. Add coriander and shallots.

  6. Squeeze in the lime, mix, garnish with more taco seasoning, and serve with tortilla chips.
