Juice the pomegranates (if using fresh): Cut the pomegranates in half and use a juicer to extract the juice. Strain the juice through a fine mesh strainer to remove any seeds or pulp.
Combine ingredients: In a medium, heavy-bottomed saucepan, add the pomegranate juice.
Simmer slowly: Bring to a gentle boil over medium heat, then reduce the heat to low. Let it simmer uncovered for about 90-120 minutes, stirring occasionally to prevent burning.
Check consistency: When the mixture reduces to about 1 to 1¼ cups and coats the back of a spoon like syrup, it’s ready. (It will continue to thicken slightly as it cools.)
Cool and store: Remove from heat and let it cool completely. Pour into a clean glass jar or bottle and store in the refrigerator for up to 6 months.
