2-ingredient Almond Flour Cookies
  1. In a bowl add the dates and warm water together. If your dates are not soft, then leave them to soak for 20 minutes.

  2. Mash or blend the dates to a paste.

  3. Add the almond flour and mix well.

  4. Shape into 8-10 balls and add them to a lined baking tray.

  5. Using a fork press them down into cookie shapes.

  6. Bake for 10-12 minutes until the edges are golden. Cool on a wire rack.

  7. Melt your chocolate and add about a tsp of chocolate to the same baking tray. Add the cookie on top and press down. Refrigerate until set, about 20 minutes.
