Lemon Blondies
  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving an overhang on the sides. Set aside.

  2. Make the blondies: In a large bowl, whisk the melted butter and sugar until combined. Add the eggs, lemon zest, lemon juice, vanilla, and salt. Whisk until smooth.

  3. Sift in the flour, cornstarch, and baking powder. Stir gently by hand with a spatula until just combined. Do not overmix.

  4. Pour the batter into the prepared pan and spread evenly. Bake for 18-22 minutes, until the edges are lightly browned and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.

  5. Let the blondies cool completely in the pan on a wire rack.

  6. Make the glaze: In a small bowl, whisk the powdered sugar, lemon juice, and zest until smooth.

  7. Using the parchment overhang, lift the blondies out of the pan and place them on a cutting board. Drizzle the glaze over the top and leave to set for 15-30 minutes. Cut into squares and serve.
