Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet or pan, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook the chicken until it's browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant.
Stir in the Italian seasoning and crushed red pepper flakes, if using.
Add the sun-dried tomatoes, heavy cream, and chicken broth. Bring the mixture to a simmer and cook for about 3-4 minutes, allowing the flavors to meld.
Stir in the Parmesan cheese until melted and the sauce is creamy and smooth.
Add the chopped spinach to the skillet and cook for about 2 minutes, until wilted.
Return the cooked chicken to the skillet, along with the drained pasta. Toss everything together until the pasta and chicken are well-coated with the sauce.
Garnish with fresh basil if desired, and serve immediately.
