Crunchy, Fruity Carrot Salad
  1. Using a vegetable peeler, carefully peel up and down the length of the carrots to create thin ribbons. Add to a large bowl and lightly season with salt.

  2. In a bowl or measuring cup, combine the Parmesan, garlic, orange zest, lemon zest, lemon juice, chilis, honey. While constantly whisking, slowly stream in the olive oil to emulsify. Taste and season with salt if needed.

  3. Drain any excess liquid from the bowl of carrots. Add the almonds, raisins and pour over the dressing. Toss until coated.
