Make the batter: In a bowl, whisk together flour and salt. Make a well in the centre, crack in the eggs, and gradually whisk in the milk until smooth. Stir in the oil or melted butter.
Rest the batter: Let it sit for 15–30 minutes (optional but helps texture).
Cook the pancakes: Heat a non-stick pan over medium heat. Add a little oil, pour in a ladle of batter, swirl to coat the pan. Cook for 1–2 minutes until golden, flip, and cook the other side.
