Start by spraying the potato pieces with a bit of oil and seasoning them with Cajun seasoning and potato starch. Make sure they are well coated, then place them in the air fryer until they become crispy.
While the potatoes are cooking, dice the chestnut mushrooms and red pepper, and shred the curly kale or any low-calorie green vegetable you prefer.
Dice the tomato and set it aside for later use as a topping.
In a hot pan, cook the chicken mince until it is browned. Then, add the diced mushrooms, red pepper, and kale, cooking until the vegetables are tender.
Season the chicken and vegetable mixture with your preferred seasoning.
Once the fries are ready, transfer them to a bowl. Top them with the cooked chicken and vegetable mixture, add the diced tomato, sprinkle with chilli cheese, drizzle with Nando’s sweet chilli sauce, and finish with jalapenos and pickled red onions if you like.
