Preheat oven to 200c.
Bring a pot of water to a boil. Then add chopped broccoli, blanch for 2 minutes.
Drain broccoli and dry with a paper towel.
Add broccoli to a prepared baking tray.
Using the back of a cup or mug, press down onto the broccoli until flat.
In a small bowl mix together the dressing ingredients.
Spread dressing onto each broccoli.
Sprinkle over some Parmesan cheese.
Roast for 30-40 minutes until golden brown.
