Smashed Broccoli
  1. Preheat oven to 200c.

  2. Bring a pot of water to a boil. Then add chopped broccoli, blanch for 2 minutes.

  3. Drain broccoli and dry with a paper towel.

  4. Add broccoli to a prepared baking tray.

  5. Using the back of a cup or mug, press down onto the broccoli until flat.

  6. In a small bowl mix together the dressing ingredients.

  7. Spread dressing onto each broccoli.

  8. Sprinkle over some Parmesan cheese.

  9. Roast for 30-40 minutes until golden brown.
