  1. Crack the eggs into a large bowl, add in the granulated sugar and Greek yogurt, using an electric mixter mix together until you end up with a light and creamy texture, about 2 minutes

  2. Add in the flour, making sure to run it through a fine sieve as you add it into the bowl to sift the flour, then add in the baking powder, salt and sunflower oil, once again using the electric mixter mix until you end up with a thick and creamy batter, about 2 to 3 minutes

  3. Remove the green leaves from the strawberries (that have already been washed & dried), then cut each strawberry into 4 evenly pieces and then cut off any of the stem

  4. Add the cut strawberries into the batter, using a spatula gently fold the batter until everything is well mixed

  5. Line a round baking pan with parchment paper (I used an 8 inch / 20 cm pan) and brush the sides with olive oil, then add the batter into the pan

  6. Add the baking pan into a preheated oven, bake + broil option (bottom + top heat) 180 C - 355 F

  7. After about 40 minutes the cake should be perfectly cooked, just pierce with a toothpick in the middle, if it comes out cleanly it is ready to go, remove the cake from the oven and let it rest at room temperature

  8. Once the cake is cool enough to handle, remove from the baking pan and transfer into a serving dish

  9. Sprinkle with powdered sugar and serve, enjoy!
