Mini Banana Pancakes

  3. Add the milk mixture, melted coconut oil, and vanilla extract to the dry ingredients. Whisk just until combined. The batter should be thick and slightly lumpy. Do not overmix.

  4. Let the batter rest for 5-7 minutes.

  5. Slice the bananas into thick rounds. Dip each banana slice into the batter, making sure it is fully coated.

  6. Cook in a nonstick pan over medium heat for 1-2 minutes per side, or until golden brown.
