Sheetpan Breakfast Burritos
  1. Preheat the oven to 400°F.

  2. Chop the Yukon gold potatoes, bell peppers, and half a yellow onion, then place them on a sheet pan.

  3. Drizzle the vegetables with olive oil and season with salt, paprika, chili powder, garlic powder, and pepper.

  4. Roast the mixture in the oven for 15 minutes.

  5. Add your choice of protein to the sheet pan and continue roasting for another 15 minutes.

  6. In a bowl, whisk together a dozen eggs, a pinch of salt, pepper, garlic powder, and a little water.

  7. Pour the egg mixture over the roasted vegetables and protein on the sheet pan.

  8. Cook everything in the oven for an additional 15 minutes.

  9. Once cooked, slice the mixture into 12 sections to create the filling for the burritos.

  10. On each tortilla, spread some heated refried beans, add shredded cheese, and top with the egg and vegetable mixture along with the protein.

  11. Drizzle chipotle sauce over the filling, then brown each burrito in a skillet and wrap them up.
