Saag Paneer Gnocchi
  1. Start by frying off your onion, garlic and ginger with the spices in some butter until softened.

  2. Add in the spinach and wilt down, then add in the edamame beans and peas and stir to combine and season and cover.

  3. Pour in the coconut milk then blend and set aside.

  4. Add your cubed tofu to the cheesey marinade then place in the oven or air fryer for 15 mins at 190C until the tofu has firmed up and gone slightly crispy.

  5. Fry off your gnocchi in some vegan butter until slightly browned, then pour in your saag sauce, I had too much so I put some in a jar for another recipe. So you can do that too.

  6. Fry off some more edamame in some butter, chilli oil and garam masala then serve up with coconut yoghurt and some salad and enjoy!
