Add the sliced tofu to a pot with water, soy sauce,
and apple cider vinegar. Boil for 5 minutes, then drain
and pat dry.
Mix all the spices. Sprinkle half over the tofu with
oil and toss to coat. Leave for 10 minutes.
Heat oil in a pan over medium-high heat. Add tofu
strips and fry for 6-8 minutes until crispy.
Sprinkle the rest of the spice mix over the tofu, stir
for 30 seconds, then remove from heat. Put the tofu pieces into a container in fridge, and put other chopped vegetables into a separate container.
Assemble the garlic sauce and put in a small covered bowl in fridge.
