Hidden Veg Sausage Rigatoni
  1. First dice the carrot, onion, celery and pepper.

  2. Heat up some oil in a large pan over a medium heat. Remove the sausage skin and add the sausage to the pan. Break it up and cook until crispy. Remove the sausage from the pan and set aside.

  3. Add the carrot, onion, celery and pepper to the pan. Cook for 5 minutes, then add grated garlic, smoked paprika, salt and black pepper then cook for 1 minute.

  4. Add the tinned tomatoes, then simmer for 5-10 minutes. Blend the sauce until totally smooth, then add it back to the pan with the sausage.

  5. Boil the pasta until cooked, drain and add to the pan with the sausage and sauce. Mix until fully coated. Top with grated parmesan and enjoy.
