Make the dough: Dissolve the bread yeast and 3 tablespoons of sugar in the milk.
Add the egg, flour, salt, vanilla, and soft butter/margarine. Knead until a smooth dough forms.
Cover and let rise for 1 hour.
Make the pastry cream: Heat the milk, then add the egg, 2 tablespoons of sugar, and cornstarch. Cook until thickened.
Remove from heat and stir in the vanilla and 1 tablespoon of butter.
Let cool completely.
Roll out the dough into a rectangle. Spread the pastry cream over the dough, then sprinkle with raisins.
Roll up the dough tightly and cut into slices.
Place the slices on a baking sheet, brush with the egg yolk and milk mixture, and sprinkle with almond flakes.
Bake at 180°C (350°F) for 20-25 minutes until golden brown.
