Once you've prepped and charged your ginger, onions and spices.. add everything into your stock pot: turkey bones/ carcass, charred ginger and onions, toasted spices, rock sugar, whites of scallion, water, fish sauce, salt, and carrots/ celery if you are using.
Bring this to a boil. Once its boiling, reduce heat and simmer for 30 minutes. (Note: as it comes to a boil, foam will appear. Make sure u scoop it out)
After 30 mins, remove the spice bag and continue to simmer for another 30 minutes. (Note: you can add water if needed… I would do this only once and at the ½ way mark)
After a total of 1 hour simmering, taste test and adjust to preference. Now you just need to assemble yourself a bowl.
Im using beef balls in my pho. if you are too, I recommend cooking them in the broth. Assemble bowl with all the ingredients listed under TOPPING. Please note, those toppings are all optional.
