Cherry Syrup

1. Combine all of the ingredients in Table 1, thoroughly dissolving the vanillin and then transfer to a bottle. It is important to age this Cherry Oil composition for at least a week before use.

2. Mix the ingredients in Table 2 according to the order (i.e. mix the Cherry Oil with the benzaldehyde, dissolve in the alcohol, add the glycerin and then the colouring). Stir this mixture until thoroughly combined. Transfer to a bottle.

3. To prepare the cherry syrup, dissolve 12 grams of malic acid (or citric acid) in 200 mL of simple syrup, and set aside. Take 16g of cherry flavour concentrate and add it to 500 mL of simple syrup and mix thoroughly. Combine the two mixtures, with thorough mixing and then add enough simple syrup to make exactly 1 litre of the cherry flavour syrup.

4. Prepare a soda fountain style drink by adding 60 mL of syrup to a 12 oz (355 mL) glass and fill with carbonated water.
