Chop 10g of ginger and add to a mason jar
Add 10g of sugar to the jar
Add 250mL of filtered water
Seal the lid and shake well to mix the sugar
Loosen the lid to allow gas to escape
Feed the ginger bug daily for 3-5 days by adding 10g each of chopped ginger and sugar
Continue feeding until the mixture becomes very foamy
For easy mode: Add 100mL of strained ginger bug to 1L of juice in a fermentation bottle
Leave the sealed bottle on the counter for 2-4 days at room temperature
Refrigerate overnight before opening
For Fanta recipe: Zest 2 oranges, 2 mandarins, and 1 lime
Mix zest with 100g sugar and let sit overnight to extract oils
Juice the oranges and mandarins into the zest-sugar mixture
Strain out the zest and add water to reach 1L
Add 100mL of strained ginger bug to the mixture
Ferment for 4-6 days on the counter
Refrigerate overnight before serving
For Sprite recipe: Zest 2 lemons and 2 limes
Mix zest with 120g sugar and let sit overnight
Add water to the zest-sugar mixture and strain out the zest
Top up with water to just under 1L
Add 100mL of strained ginger bug
Ferment for 4-6 days on the counter
Refrigerate overnight before serving
Burp bottles after 2 days to release pressure
Chill before opening to help CO2 dissolve and prevent overflow
Store finished soda in the refrigerator for 1-2 weeks
Continue feeding ginger bug or store in refrigerator between batches
