Homemade Probiotic Soda Using Ginger Bug
  1. Chop 10g of ginger and add to a mason jar

  2. Add 10g of sugar to the jar

  3. Add 250mL of filtered water

  4. Seal the lid and shake well to mix the sugar

  5. Loosen the lid to allow gas to escape

  6. Feed the ginger bug daily for 3-5 days by adding 10g each of chopped ginger and sugar

  7. Continue feeding until the mixture becomes very foamy

  8. For easy mode: Add 100mL of strained ginger bug to 1L of juice in a fermentation bottle

  9. Leave the sealed bottle on the counter for 2-4 days at room temperature

  10. Refrigerate overnight before opening

  11. For Fanta recipe: Zest 2 oranges, 2 mandarins, and 1 lime

  12. Mix zest with 100g sugar and let sit overnight to extract oils

  13. Juice the oranges and mandarins into the zest-sugar mixture

  14. Strain out the zest and add water to reach 1L

  15. Add 100mL of strained ginger bug to the mixture

  16. Ferment for 4-6 days on the counter

  17. Refrigerate overnight before serving

  18. For Sprite recipe: Zest 2 lemons and 2 limes

  19. Mix zest with 120g sugar and let sit overnight

  20. Add water to the zest-sugar mixture and strain out the zest

  21. Top up with water to just under 1L

  22. Add 100mL of strained ginger bug

  23. Ferment for 4-6 days on the counter

  24. Refrigerate overnight before serving

  25. Burp bottles after 2 days to release pressure

  26. Chill before opening to help CO2 dissolve and prevent overflow

  27. Store finished soda in the refrigerator for 1-2 weeks

  28. Continue feeding ginger bug or store in refrigerator between batches
