Michelle's Apple Crisp
  1. To prepare filling: Combine apples, ½ cup brown sugar, 3 Tbsp cornstarch, 1 tsp cinnamon, ¼ tsp nutmeg, 2 Tbsp lemon juice, and ¼ tsp salt in a large pot over medium-low heat. Cook, stirring occasionally, until the sugar has melted and the apples have softened, 5 to 7 minutes. Remove from the heat.

  2. To prepare topping: Combine 1 cup flour, 1 cup oats, ¾ cup brown sugar, ¾ cup pecans, ½ tsp cinnamon, and ¾ tsp salt in a large bowl. Add 1 ½ sticks cubed cold butter and stir with fork or mix with your hands until the mixture has pea-sized crumbs. It's okay if there are clumps of different sizes.

  3. To assemble crisp: Fill Souper Cubes trays approximately ⅔ of the way with the apple filling. Sprinkle the oat topping on top, pressing down gently to help it stay together.

  4. To enjoy for later, place lid on top of tray and place in freezer. When you're ready to bake, preheat the oven to 350 degrees F. Bake until the crumb topping is crisp and the filling is bubbling at the edges, about 45 minutes. Serve topped with whipped cream or your favorite ice cream.
