Coconut Lime Bars (keto)
  1. Preheat oven to 350°F and line an 8x8-inch baking dish.

  2. Combine all of the crust ingredients in a bowl. Mix well until a dough forms.

  3. Press the dough into the baking dish and about ½-inch up the sides.

  4. Bake for 10 minutes.

  5. Allow to cool while you make the filling.

  6. Melt butter in a saucepan over a low heat.

  7. Remove from heat and whisk in Swerve, lime juice and lime zest.

  8. Slowly add in the egg yolks and continue to whisk.

  9. Return to the stove and cook over low heat, continually whisking until the curd begins to thicken.

  10. Remove from heat. Whisk in arrowroot powder and gelatin until completely dissolved.

  11. Pour filling over the crust and spread evenly.

  12. Bake for 15 minutes.

  13. When cooled, cut into squares and garnish with additional lime zest or shredded coconut, and serve.
