Preheat your oven to 400° F and prepare a muffin tin by spraying it with cooking spray.
Spoon the leftover rice into each muffin cup, then use the bottom of a spoon to firmly press the rice down into the holes.
Spray the top of the pressed rice with cooking spray again.
Place the skinless salmon fillet into the muffin tin and drizzle your favorite teriyaki sauce over the top.
Bake the rice cups in the preheated oven for about 30 minutes.
In a separate smaller oven, broil the salmon for approximately 10 minutes.
Once everything is cooked, the rice cups should easily pop out of the muffin tin.
