Preheat oven to 350-375°F
Arrange chicken thighs with sliced red bell pepper, green bell pepper, red onion, and garlic cloves in a baking dish
Add rosemary and thyme sprigs if using
Drizzle with oil and season with chicken bouillon powder, garlic powder, onion powder, smoked paprika, dried oregano, black pepper, and dried dill
Cover with foil and bake for about 1 hour at 350-375°F
Remove foil and baste chicken
Increase oven temperature to 400-425°F and bake for 10-15 minutes until skin is crispy as desired
Adjust seasoning amount depending on size of chicken thighs
