Crispy Rice Salad (nam Khao)
  1. Mix 2 ½ cups cooked basmati rice with 2 tablespoons Thai red curry paste and 3 teaspoons oil

  2. Spread mixture on a baking sheet

  3. Bake at 200°C (400°F) for 30 minutes, stirring halfway through

  4. Mix dressing ingredients: 2 tablespoons soy sauce, 1 chili, 2 cloves garlic, juice of ½ lime, 2 tablespoons sugar, and ¼ cup water

  5. Prepare fresh herbs (mint, parsley/cilantro), smashed and chopped cucumber, toasted coconut flakes, peanuts, and fried shallots

  6. Combine crispy rice with fresh ingredients in a bowl

  7. Pour dressing over and mix well

  8. Serve in lettuce wraps
