Mix 2 ½ cups cooked basmati rice with 2 tablespoons Thai red curry paste and 3 teaspoons oil
Spread mixture on a baking sheet
Bake at 200°C (400°F) for 30 minutes, stirring halfway through
Mix dressing ingredients: 2 tablespoons soy sauce, 1 chili, 2 cloves garlic, juice of ½ lime, 2 tablespoons sugar, and ¼ cup water
Prepare fresh herbs (mint, parsley/cilantro), smashed and chopped cucumber, toasted coconut flakes, peanuts, and fried shallots
Combine crispy rice with fresh ingredients in a bowl
Pour dressing over and mix well
Serve in lettuce wraps
