In a food processor, combine the pitted medjool dates, oats flour, and vanilla extract. Blend until the mixture is well combined and forms a sticky dough.
Melt the dark chocolate in a microwave or over a double boiler until smooth.
Once the dough is ready, take small portions and roll them into balls.
Roll each ball in the sesame seeds to coat them evenly.
After coating, place the balls on a tray lined with parchment paper and refrigerate for about 30 minutes to firm up.
Serve chilled or at room temperature.
