Unroll the phyllo dough and re-roll it into a log.
Slice the log into ½-inch pieces.
Spray a baking pan and layer half of the phyllo slices. Open up the ribbons and let them fall naturally into the pan.
Mix all the cheeses you have on hand in a bowl.
Add 2 eggs and stir until combined.
Pour the cheese mixture over the phyllo ribbons in the pan.
Top with the remaining phyllo ribbons, spreading them evenly.
Spray the top with more cooking spray and sprinkle sesame seeds if desired.
Bake at 375°F (190°C) until golden and crisp, about 40 minutes.
Let it cool slightly before cutting into squares or wedges.
