Cook the Beef: Preheat the oven to 350°F (175°C). In a large skillet, heat olive oil over medium heat. Add the ground beef and diced onion, cooking until beef is browned and the onion is softened. Add minced garlic and cook for another minute.
Prepare the Casserole: In a large mixing bowl, combine the cooked ground beef mixture, uncooked rice, cream of mushroom soup, diced tomatoes, beef broth, paprika, salt, and pepper. Stir everything together until well-mixed.
Assemble: Pour the mixture into a greased 9x13-inch casserole dish. Cover tightly with aluminum foil.
Bake: Bake for 60 minutes, or until the rice is cooked through. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for another 10 minutes until the cheese is melted and bubbly.
