Preheat oven to 375°F.
In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess grease.
Stir in taco seasoning and diced tomatoes with green chilies. Simmer for 5–7 minutes until slightly thickened.
Spread corn chips evenly in the bottom of a baking dish.
Spoon the beef mixture over the chips.
Sprinkle shredded cheddar cheese evenly over the top.
Bake for 15–20 minutes, until cheese is melted.
Remove from oven and let rest for 5 minutes.
Top with sour cream and chopped parsley before serving.
