Preheat oven to 400F
Thinly slice your onions.
In a 13”x9” baking dish, add your onions, tomatoes, paprika, Italiano seasoning, dried parsley, salt, pepper, garlic, and olive oil.
Mix well and cover with tin foil.
Bake at 400F for 1hr.
With 10min left cook your pasta and save ½ cup of noodle water.
Once done, remove your baking dish from the oven and add coconut milk, fresh parsley, lemon juice, pasta, and pasta water. Mix well
Top with parmesan cheese and enjoy!
