The Fall House Salad
  1. Soft-boil eggs: Add eggs to gently simmering water and cook for 9 minutes - no more! Transfer to cool water to stop cooking.

  2. Make the dressing: Whisk vinegar, Dijon, honey, salt & pepper. Slowly stream in olive oil.

  3. Dress the greens: Toss the kale, spinach, and arugula with about ⅓ of the dressing to lightly coat.

  4. Assemble: Add the chicken, bacon, nuts, craisins, cheddar, apple & eggs. Toss gently, adding more dressing to taste. Enjoy! You will likely have some dressing leftover — save it for tomorrow.
