Best Ever Crispy Sticky Garlicky Soy Sauce Wings
  1. Heat the oven to 375F

  2. Pat the wings dry with a paper towel in a large bowl

  3. Combine wings, oil, salt, and garlic powder

  4. Use your hands to evenly massage the seasonings on the wings

  5. Arrange wings in an even layer, skin side down, on an unlined sheet tray

  6. Top with a wire rack and press with weights or a heavy skillet

  7. Place into the oven to roast until the fat has melted out, the skin on top is bubbly, and underneath is glassy and golden, about 45 minutes

  8. Use a spatula to carefully scrape the wings off the tray and into a large bowl

  9. Place the tray across two burners on medium

  10. Add the water and scrape up all the browned bits stuck to the pan

  11. Add the sugar to a medium pot and place over medium heat

  12. Cook, stirring occasionally, until caramelized

  13. Add the water and drippings from the tray, soy sauce, and garlic

  14. Simmer until thick enough to lightly coat the back of a spoon, about 4 minutes

  15. Scrape the glaze over the wings and toss to coat

  16. Transfer to a platter and sprinkle over the fried garlic and scallions
