Mini Cornbread Chili Cheese Dip
  1. Spread the cream cheese evenly across the bottom of the prepared baking dish (I used a 14oz ceramic ramekin).

  2. Pour the chili evenly over the cream cheese layer, then sprinkle the shredded cheddar cheese evenly over the chili layer.

  3. Prepare corn muffin mix according to box directions and scoop enough batter to cover cheese.

  4. Bake at 400° for 15-20 minutes.

  5. Allow to cool slightly and serve warm.
