Preheat oven to 400 degrees. On a lightly floured surface, roll out of the dough into a 12×18″ rectangle. Brush the dough with olive oil, and sprinkle with Darigold Sharp White Cheddar. Sprinkle with thyme, and paprika.
Using a pizza cutter, slice dough into 1 ½″ sections lengthwise. Fold each strip in half and twist to form a rope. Place on parchment lined baking sheet. Brush with olive oil and sprinkle with salt.
Bake for 12-14 minutes or until the puff pastry is crispy and golden.
