In a medium saucepan whisk together sugars, salt and cocoa powder well combined.
Add water and whisk thoroughly.
Turn heat to medium and bring mixture to a boil, while whisking frequently.
Reduce heat to medium-low and whisking occasionally.
Allow the mixture to simmer until it has slightly reduced and thickened.
Remove from heat and stir in vanilla extract.
Pour into a glass jar. Allow to cool completely before covering and refrigerating. Keeps for 2-3 weeks, if you don’t drink it all before then!
