Tuna Cucumber Boats
  1. In a bowl, mix the drained tuna with diced jalapeño, dill pickles, and soaked red onion.

  2. Boil the eggs for 7 minutes 20 seconds, then cool in an ice bath, peel, dice, and add to the bowl.

  3. Stir in Dijon mustard, mayo, sriracha (or hot sauce), salt, and pepper. Mash everything together with a fork.

  4. Hollow out an English cucumber and fill it with the tuna mixture.

  5. Garnish with sesame seeds and a drizzle of chipotle hot sauce.
