Add the lion's mane mushroom pieces and stir-fry until they begin to brown
Add rice wine, light soy sauce, rock sugar, and water
Simmer until the mushrooms are tender and the sauce reduces
Add fresh basil and chilli to taste
Stir well and serve hot
