Tofu & Eggplant Soba Noodle Salad
  1. Preheat oven to 180 degrees

  2. Toss tofu & eggplant in tapioca, sesame seeds, furikake, salt & pepper, then drizzle on the neutral oil & soy. Toss tofu coat then cook in the oven for about 20 min until they are golden.

  3. During this time, cook your soba noodles in boiling water for 4-6 min. Drain & wash until cold water.

  4. Mix together dressing ingredients

  5. Chop & prep all salad ingredients. Place in a bowl & or container.

  6. When ready to eat, put everything together. Toss & enjoy!
