Preheat oven to 180 degrees
Toss tofu & eggplant in tapioca, sesame seeds, furikake, salt & pepper, then drizzle on the neutral oil & soy. Toss tofu coat then cook in the oven for about 20 min until they are golden.
During this time, cook your soba noodles in boiling water for 4-6 min. Drain & wash until cold water.
Mix together dressing ingredients
Chop & prep all salad ingredients. Place in a bowl & or container.
When ready to eat, put everything together. Toss & enjoy!
