Spring Roll Salad & Air Fryer Brussels Sprouts
  1. Cook rice noodles and rinse with cold water

  2. Prep all vegetables and chop peanuts

  3. Whisk together peanut sauce ingredients: peanut butter, coconut aminos, soy sauce, rice vinegar, hot water, sriracha, garlic powder, ginger, and sesame oil

  4. Add noodles and vegetables to a bowl and pour peanut sauce over top

  5. Steam Brussels sprouts for 8 minutes until half cooked

  6. Transfer Brussels sprouts to air fryer tray or parchment lined baking sheet

  7. Smash Brussels sprouts until slightly flattened

  8. Season with olive oil, salt, nutritional yeast, paprika, and garlic powder

  9. Air fry at 450F for 15 minutes

  10. Flip Brussels sprouts and air fry for an additional 10 minutes until crispy

  11. Soak cashews for 30 minutes and drain

  12. Blend cashews, roasted red bell pepper, almond milk, garlic, and salt until smooth to make dip
