Lemon Cookie Sandwiches
  1. Start by preheating your oven to 350 degrees F and grabbing all ingredients and parchment lined baking tray.

  2. In a bowl with electric mixer combine butter and sugar. Once creamed together add lemon juice, zest and vanilla bean paste. Can sub this for vanilla extract. Combine well on medium speed.

  3. Combine flour, cornstarch and salt in a separate bowl and mix with a fork. Gradually add this to your wet mixture until just combined. If you live in a warmer climate, or have a warmer house, it's not a bad idea to leave this cookie dough in the fridge for about an hour to cool before baking. Skipping the step may result in the cookie spreading more than you'd like.

  4. Transfer to a floured surface, roll out to about 1.5" thickness and use your favourite cookie cutters to cut out about 18-22 cookies, depending on the size.

  5. Bake for 10-12 minutes until golden.

  6. Combine all ingredients for icing and mix until smooth. Once the cookies have cooled completely you can pipe the icing on them. Makes about 10 cookie sandwiches.
