  1. Combine the chicken, cornstarch, baking soda, 2 teaspoons sugar, 0.5 teaspoon salt, Shaoxing wine, soy sauce, and egg white. Massage the mixture to tenderize the chicken.

  2. Bring a pot of water to a boil. Gently add the chicken pieces and cook for 30 seconds to 1 minute until the chicken is velvety.

  3. Drain the chicken and spread it out on a baking sheet to dry.

  4. Heat a wok over high heat until smoking. Add a thin layer of oil and swirl to coat the wok.

  5. Add the onion, green bell pepper, and red bell pepper. Cook for 1-2 minutes without stirring too much to get some char on the vegetables.

  6. Push the vegetables to the side and add the garlic and ginger. Cook for 30 seconds until fragrant.

  7. Add the chicken, pineapple, cashews (if using), and the sauce (pineapple juice, 3 tablespoons ketchup, 2 tablespoons vinegar, 1-2 tablespoons sugar, 1 teaspoon soy sauce, 1-2 teaspoons cornstarch). Stir to combine and cook until the sauce thickens, about 1-2 minutes.

  8. Serve immediately.
