Warm Kale And Grain Power Bowl
  1. Cook the rice.

  2. Rinse rice.

  3. Boil water.

  4. Add rice (or quinoa) into water.

  5. Bring back to a boil.

  6. Then, reduce heat and maintain a simmer.

  7. Cook until water is absorbed - about 15-18 minutes.

  8. Saute mushrooms & red onions in a pan.

  9. If using black beans, rinse and drain them.

  10. If using sweet potato, peel and dice it into small cubes. Season the sweet potato cubes with a pinch of salt and a drizzle of olive oil and roast it at 400°F for about 20 min.

  11. Wash and chop kale.

  12. In a large bowl layer your grain, kale, sauteed mushrooms, beans or sweet potatoes & sliced avocado.

  13. Drizzle olive oil.

  14. Juice of half a lemon.

  15. Add a pinch of sea salt.

  16. Enjoy!
