Cook the rice.
Rinse rice.
Boil water.
Add rice (or quinoa) into water.
Bring back to a boil.
Then, reduce heat and maintain a simmer.
Cook until water is absorbed - about 15-18 minutes.
Saute mushrooms & red onions in a pan.
If using black beans, rinse and drain them.
If using sweet potato, peel and dice it into small cubes. Season the sweet potato cubes with a pinch of salt and a drizzle of olive oil and roast it at 400°F for about 20 min.
Wash and chop kale.
In a large bowl layer your grain, kale, sauteed mushrooms, beans or sweet potatoes & sliced avocado.
Drizzle olive oil.
Juice of half a lemon.
Add a pinch of sea salt.
