Crispy Tennessee Onions
  1. Preheat oven to 400°F. Gather all ingredients.

  2. Line a large rimmed baking sheet with parchment paper. Using a mandolin, thinly slice onion into rings about 1/16-inch thick.

  3. Stir together dried parsley, dry mustard, salt, pepper, garlic powder, and smoked paprika in a small bowl.

  4. Sprinkle ⅔ cup of the Parmesan evenly over prepared baking sheet in an even layer. Sprinkle Cheddar and Gouda evenly over Parmesan. Place onion rings in a single layer on cheese mixture. Sprinkle evenly with spice mixture. Sprinkle remaining ⅓ cup Parmesan evenly over onions.

  5. Bake in preheated oven until cheese is deep golden brown and lacey around edges and onions are tender, 18 to 20 minutes.

  6. Let stand on baking sheet until set, about 5 minutes. Carefully loosen from parchment using a wide spatula. Cut into individual pieces or break into rustic shards. Serve warm with ranch dressing.
