  1. Heat up a pan over medium high heat with a generous amount of olive oil. Add tomatoes and sauté for a few minutes. Stir in the tomato paste and cook until thickened and jammy, about 5 minutes. Season to taste with salt and pepper.

  2. Crack your eggs into the tomatoes. Season with salt again. Carefully separate the whites from the yolks in the pan and stir them together with the tomatoes to get them nicely mixed together. When the whites are halfway cooked, break the yolks. Spread the eggs into an even layer, turn the heat to medium low and continue to cook until the whites are fully cooked and the yolks are jammy. Turn the heat off and let sit for 3-5 minutes to finish cooking.
