For chicken: Bring a pot of water to a boil. Once boiling, add chicken in and cook on medium high heat for 20-25 minutes. Once cooked, let it cool, pat dry, and shred into small pieces.
For dressing: Combine all dressing ingredients in a bowl and whisk until well combined.
For air fryer wonton strips: Cut wonton wrappers into strips, coat with oil, air fry at 350 degrees F for about 8 minutes until crispy.
For salad: Mix all salad ingredients except avocado. Pour dressing over salad and toss well. Top with avocado if desired and serve immediately.
