In a bowl, mix the olive oil, tamari/soy sauce, vinegar, honey, jalapeños, garlic, and a pinch of pepper. Add the chicken and toss. If time allows, let sit for 10 minutes to deepen the flavor.
Take the skewers and thread the chicken with the pineapple chunks. Reserve the marinade.
Set your grill, grill pan, or skillet to medium-high heat. Grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 10 to 12 minutes total.
Meanwhile, pour the reserved marinade into a small pot. Bring to a boil and cook 5 minutes, until reduced. Brush the sauce over the skewers after grilling.
To make the sesame sauce: combine all ingredients in a bowl.
Serve the chicken and pineapple with limes, green onions, and sesame sauce for dipping. Enjoy!
