Preheat oven to 220C
Mix the dough ingredients together with spoon and quick knead. Cover with clingfilm and let it sit for at least 30 minutes or up to 2 hours.
Flour your surface, knead the dough, cut into 8 pieces, shape each into a round and roll it out.
Add pesto, basil, mozzarella, and garlic mix. Pinch together and gently roll out again.
Place on a baking sheet with greaseproof paper and brush with olive oil. Bake for 7-9 minutes at 220C.
